If a discovery is said to be an accident meeting a prepared mind; then we took what life threw at us back in the early 2000's - uncertain future in agriculture, childhood health problems which influenced a lifelong interest in the relationship of food vs health and set up a bakery business in which there was no room for any artificial food additives. And so we sold the cows in 2004 and the bakery moved into the now empty milking parlour. The Foods of Athenry was born. And should you believe in the mysteries of the Universe, my grandparents owned one of the largest bakeries in the West of Ireland almost a hundred years ago. Plus the setting is pretty darn picturesque"
