Brown Bread Ice Cream

There are a few different ways to go about this. You can make all from scratch or you can improvise.
This is the improvised version! Life is complicated, food shouldn't be..
Buy a 1Lt tub of good quality vanilla ice cream.
Decant into a bowl and stir around to soften slightly.
In the meantime take 100g ( appx. 4ozs) of brown breadcrumbs - these have to be dry. So if in doubt dry them off by spreading them out on a baking sheet in a preheated oven ( 180C/400F/Gas 5) for about 10minutes.
Evenly spread the breadcrumbs about on the baking sheet and sprinkle with appx 50g (about 2oz) brown sugar over the top.
Bake until caramelised ( the sugar melts and the bread slightly darkens..), turning occasionally ( appx another 10 minutes ). Watch like a hawk - it will burn.
As soon as they are done, and while still very hot, stir again, scraping the pieces into a bowl. Keep stirring for a few minutes, until the crumbs have cooled slightly and are crisp rather than sticky.
Leave to cool, break up any remaining lumps and mix into the ice cream.
Decant back into the tub or else line a freezer proof bowl with 2 layers of cling film and fill with your mix.
Freeze until ready to serve. To remove from bowl - put some boiling water into a larger bowl ( or the sink ) and sit the ice cream bowl in for a few seconds. Dont let the contents get wet. Turn the bowl upside down onto your serving plate - the ice cream will pop out. Take away your cling film.. Simple!..
Of course , if you fancy adding in a little drop of the strong stuff, you can stir in a dessertspoon of Baileys or Irish Whiskey at the point where you are softening out your ice cream!! Enjoy..
